I haven’t really had the energy (or desire 😬) to cook anything elaborate or create new recipes lately, so simple staples it is! I hesitate to even call this a recipe, it’s really just assembling a few ingredients. Perfect when you’re short on time but still want flavorful food!
This week I made beef for lunches and prepped baked sweet potato and some greens. For the sweet potatoes, simply bake them at 400 for about 40 mins or so. Mash with a fork, add butter, season, voila. Good food can be easy!
Dairy-free, Gluten-free, Soy-free
Ingredients
1 Tbsp Extra Virgin Olive Oil
1 lb of pastured, grassfed beef
~1/4 cup of white onion, diced
3-4 cloves of garlic, crushed
1 can of fire roasted tomatoes (14.5 oz)
1.5 Tbsp tomato paste
1/4 tsp dried onion
1/4 tsp salt
1/8 tsp black pepper
dash of cayenne
dash of red pepper flakes
Instructions
-In a large pan, add ~ 1 Tbsp of EVOO and heat to medium. Add ground beef, and brown for about 12 mins, until the liquid has cooked down
-Add onion and garlic (and a dash more EVOO if needed), and cook for ~2 mins
-Add fire roasted tomatoes and tomato paste, and let simmer for ~5-6 minutes until liquid has cooked down
-Add spices, and serve!
