This recipe is from one of my dearest friends. I love making it for my family on Thanksgiving. This is very different from traditional squash casseroles. If you like squash, you’ll love this!
Ingredients
organic squash ( 9 total of zucchini and yellow squash)
6 Tbsp of organic melted butter
9 organic eggs, beaten
9 Tbsp of organic coconut sugar or organic cane sugar
2 cups organic milk ( substitute with any type of milk)
1 1/2 Tbsp Himalayan salt or salt of your choice
3 tsp black pepper
6 Tbsp organic gluten-free flour (use flour of your choice)
1 1/2 cups chopped yellow onions
Preparation
Preheat oven to 375 degrees
Slice squash, cook until tender ( I steam mine.), mash, and strain excess water.
In a separate bowl, combine and mix other ingredients.
Add mashed squash, and stir well.
Put in casserole dish. Bake at 375 degrees for 30-40 mins.
